Slice the squash in 1/2 to 1 in. thick slices or cut them up like french fries before coating with the cornmeal.
When my kids were small I'd cut them up like french fries and they didn't know they were eating squash until they were older. By then it was too late, they liked it!
My grandma used to cook summer squash like this. It was fast and easy for her since she'd work in the fields with the rest of the family until 11 a.m. or so then go back to the house to have a hot lunch prepared for the tired field workers at noon. Of course her fryer consisted of a deep, cast iron skillet.
